Ingredients

olive oil or coconut oil

garlic (crushed)

fresh ginger (grated)

birds eye chilli finely chopped

grated or whiz up in food processor to make rice

low salt soy sauce
Instructions
Chop all the veg ready
Heat the oil and fry the garlic, ginger and chilli for a minute
Add the chopped veggies and cauliflower rice to the pan and stir fry for 3-5 minutes
Make a hole in the middle and add the egg. Move around so it scrambles and cooks through.
Add the soy sauce and stir well before plating up.
