- 4 small chicken thighs (skinless & boneless)
- 1 lemon, juiced
- 4 cloves garlic
- 2 medium sweet potatoes cubed
- 1 tsp olive oil
- 1 head broccoli

Instructions
- Pre-heat the oven to 200C
- Place the chicken thighs on a large piece of tinfoil.
- Pour over the lemon juice and add the crushed garlic.
- Seal the parcel and bake alongside the sweet potato cubes, drizzle the oil on the cubes before baking..
- Steam the broccoli for 5-7 mins and serve.
